Tomatin is a little-known brand, although it was founded in 1897 and grew a lot in the '70s. The distillery counts 23 pot stills, capable to distill 10 million liters a year. Nowadays, production is around 2 million liters. The Tomatin 1997/2015 Sansibar is a single cask distilled in 1997 by Sansibar, a well-known bottler from Germany. This edition was dedicated to the Canadian market.
despite the age, it appears fresh. Initially the spices take over (white pepper), followed by yellow and tropical fruits (pineapple and yellow apple). Intense notes of cereals in the background. It ends with cocoa and espresso.
a good spicy first sip, rich black pepper, is followed by ripe fruits (apple as well as peach, apricot and orange). The tropical fruit side is less intense. There are some hints of cocoa and milk chocolate. Never too sweet, great intensity.
medium-long, dry. Balsamic herbs (menthol) followed by black pepper, cocoa and coffee.
In the Tomatin 1997/2015 Sansibar the ex-Bourbon cask gives dryness and a some bitter notes. The intensity is excellent, and the complexity makes it interesting.
