This ron is another excellent product of the Dominican distillery Oliver & Oliver. After twenty-five years of maturation in bourbon casks, this special version of the Opthimus undergoes a precious finish in Port pipes. It is then bottled at 43% ABV.
In the glass, aromas of sponge cake, raisins, custard, and a touch of dark chocolate. There are also some hints of nutmeg.
The flavor profile perceived on the nose is confirmed: there are notes of raisins, custard, and dark chocolate. The nutmeg is present as well, now enriched by candied orange.
Long finish, with aromas of almond and noble wood.
Overall, the Opthimus 25 years old Port Finish is a traditional Spanish-style ron, delivering a sweet and round flavor profile, with a surprising boisè personality to it. It is easy to appreciate, but at the same time id delivers a nice complexity.
