It is distilled by Beenleigh distillery in Queensland, Australia. It is the result of a long 12-day fermentation followed by pot still distillation. It is then aged for 11 years in bourbon casks and finished for four months in Palo Cortado Sherry casks.
It develops rich scents of trifle, followed by apricot, mandarin, and a touch of pear. All is enriched by ginger, mint, and cloves. The palate exhibits toasted nuts, salted caramel, mineral saltiness, and some spices. The finish is medium-long, with brown butter, honey, and cloves. It is a well-balanced rum, boasting an extreme elegance.
93Among the rums tested in blind tastings and reviews throughout the year, those scoring the best get reselected. These products were then tried once again in a new blind tasting, which means not knowing what they are during the tasting. The only indication on the sample concerns the ABV content: a red mark states that the product has an ABV higher than 50% (100° proof). The test results are then compared, and the TOP 10 is made.
