Caol Ila 12yo by Chorlton Whisky is a bottling from the renown independent bottler, distilled from a single refill ex-bourbon hogshead, with an outturn of 269 bottles.
Quite unique for an ex-bourbon aged spirit. Several of the typical Caol Ila notes can still be perceived, such a creamy vanilla and lemon dimension, paired with a salty character and bonfire smoke. At the same time there are some dirty, animal notes of barbecue, paired with intense balsamic herbs notes (rosemary), which are more reminders of Glen Scotia products rather than of the distillery from Islay. Atypical, rather savory.
Alcohol can be perceived at the beginning of the fruition, even though for a short time. Lot of aromatic herbs, smoke and grilled meat. Bonfire. Very intense in terms of ABV and aromatic palette.
Very long, maybe less elegant than other releases from the same distillery, but truly savory and intense.
Caol Ila 12yo by Chorlton whisky is overall a very interesting experience, pairing many of the unique characteristics of the distillery with very active barrel, which provided the spirit with some “dirty” notes which are definitely not the most elegant, yet making the fruition a blast of different intense tastes.
