Castarède 1987 is a vintage Armagnac produced exclusively in 1987 and bottled in 2016. 29 years in barrels is many, especially for those coming from the world of whisky, where these type of ages are rare and very expensive. Armagnac behaves differently, very aged products are not uncommon.
the fruity notes are many and well amalgamated. It starts with the classic white grape, not too sweet, to then come to the red apple, cooked pear, peach and apricot. After a few moments green pepper and cocoa beans appear, to counteract the sweetness of the fruity component. Good structure.
the first sip is slightly mineral and sweet. There are notes of red fruits, including strawberry, black cherry and plum, all supported by white pepper and saffron. The intensity is excellent. After a few moments, the flavor profile expands with cardamom, ginger and cocoa beans. There are also hints of nuts (walnut and almond).
of long persistence. Medium in intensity. It releases aromas of almond, cocoa beans, red fruits and green pepper.
In order to fully appreciate it, the right time should be dedicated to it, otherwise the different nuances of this excellent Armagnac are lost.
