Elijah Craig Barrel Proof is a whiskey produced using local grains and water, aged in virgin American oak barrels toasted for 40 seconds in such a way as to reach Level 3 char. This bourbon is then bottled with no reduction in terms of ABV. The distillery, which has boasted numerous titles, is characterized by an award-winning Visitor Center that offers, in addition to an in-depth immersive experience, three rooms dedicated to the tasting of products of the Heaven Hill group.
It opens immediately with an important hint of caramel, followed by notes of burnt sugar and crème brulee. There are also marked woody components, in this case aged oak. In addition, vanilla in pods and alcohol preserved cherries can be noted. Finally, intense notes of pecan.
Wood, caramel and an explosive peppering. Oak and cherry in spirit. A shade of citrus (cedar zest). Buttery and rich.

Elijah Craig Barrel Proof is overall a bourbon whose high ABV provides an explosive character and an intense aromatic palette. Very structured and rich, it is certainly worth trying.
