Hudson Baby Bourbon is a whiskey produced in the first distillery created in the state of New York after the Prohibition era, the Tuthilltown Spirits Farm Distillery, created following the purchase of the old Tuthilltown Gristmillmill. For this product, whose mash is constituted of only corn, is made of corn from the state of New York only which, once distilled, is aged in toasted barrels of American oak of very small size, about 4 liters, in order to accelerate the transfer of aromatic components. Barrels are also exposed to bombing sounds, thanks to specific loudspeakers positioned nearby. Each small 37.5 cl bottle is filled by hand, sealed and numbered.
The alcoholic part at the beginning is a bit evident, but it soon recomposes. Then emerges a discreet black cherry in spirit. It then continues with wet wood with its spices and clear vanilla. A slightly menthol side at the end of the olfactory part, which grows with time in the glass. The corn base is always present.
Here alcohol is much more silent. Compared to the nose, the fruity component is more pleasant and ripe, with suggestions of coconut. Vanilla is present but not too marked. Caramel and a fresh ginger drizzle. Well balanced and pleasant.

Hudson Baby Bourbon it is overall a whiskey with interesting sides; the olfactory side seems perhaps the least convincing, with alcohol not fully integrated and a medium depth palette. The palate returns pleasantness to the drink, interesting and well balanced. In the final, the raw material (corn) takes over again, with a less rich sweetness.
