Koval Rye Bottled in Bond is the limited edition, 50% ABV, 100% organic rye release from the Chicago distillery, aged for minimum 4 years, according to the regulatory. The product also obtained the kosher certification.
The mellow rye with vanilla and honey of the standard release is now paired by a darker, more complex sweetness, of burnt creme brulee. The intensity is much higher, for a nicer experience centered on toffee, caramelized apple.
A much more important spicier (Sichuan pepper, cinnamon, roasted anise) component when compared to the 40% ABV release is now taking the stage, confirming the tangerine and the vanilla.
Medium duration, sweet, yet with the mentioned complex array of spices.
Koval Rye Bottled in Bond is a more complex product than the 40% ABV release, featuring not only a more intense experience, rather a subtle and nuanced array of spices and some nice toffee / burnt creme brulee duality. A very nice expression.
