Koval Rye Finished in Maple Syrup Barrels is a limited-edition based on the same mash bill of 100% organic rye grain as the classic Koval Rye. This expression spent 6 months aging in maple syrup casks before been bottled at 50% ABV in 209 bottles.
Less sugary than expected, driven by molasses sensations, with a major amount of toffee and sticky honey, almost honey glaze. Some distant toasted oak, however little mono-dimensional due to the finish.
Very coherent with nose, it loses something compared to the classical BOB rye of same ABV.
Medium duration, slightly spicier.
Koval Rye Finished in Maple Syrup Barrels is a very unconventional exercise, reminding all of us how much sugar is added to the supermarket maple syrup, as this finish does not provide extremely sugary notes to the rye of Koval. Despite this, the overall sensation is still of a marking finish, which is covering a little the nice results of the BOB version with a sticky honey, molasses-driven notes.
