Paul Beau Hors d’Age is a cognac that has an aging of about 20-25 years. The written “Hors d’Age”, which means “beyond age”, refers precisely to the particularly long aging, and it is used only for the highest quality cognacs. Paul Beau is a family-run business, created in the 19th century by Samuel Beau, Paul’s father. The family vineyard covers over 120 hectares, in Segonzac, right in the heart of the Cognac region.
All kinds of varnishes and bourbon-like wood. Then scents of ripe bananas, peach jam and pomegranate juice, followed by notes of flowers, earth and rancio. Amazing complexity and broad flavor profile.
Good intense arrival, very bourbon-like. There are notes of toasted wood, exotic fruits, peaches, melon, and honey. An intense oak aroma tends to overwhelm the rest of the flavor profile. Then vanilla, oak spices, wood bitters, quite a bit of bitterness, and loads of varnished wood.
Long persistence. A bit bitter. All oak now, very drying, green tannins, tannic bitterness.
Overall, the Paul Beau Hors d’Age is a product of excellent quality. The nose makes you dream, with an incredibly structured, complex, and intense flavor profile. In the finish, the woody component is however too dominant, overwhelming the rest of the aromas.
