Stalk & Barrel Cask Strength is one of the first single malts produced in Ontario for more than a century, crafted at Still Water Distillery. This whisky, produced in small batches, is aged in ex-bourbon barrels for a minimum of three years.
very important vanilla, with ripe white and yellow fruit (apple, lychee) and a secondary slight citrus component (unripe mandarin). The woody notes are intense, but never too astringent. Overall an interesting nose, not very deep, but equipped with good fragrance and intensity of aromas.
savory and spicy mouth, which the ABV supports well. Good creaminess. The mandarin of the nose explodes in all its juiciness. Just less addictive and shorter lasting than the initial nose, although custard and vanilla have a good structure.

Stalk & Barrel Cask Strength is overall a product with an interesting and fragrant nose, with a marked vanilla and wood that have worked without imprinting too astringent notes. The palate appears instead a little more one-dimensional, with an entrance conditioned by the not negligible ABV, which, however, gives only a limited number of aromas and with a less long finish than expected.
