Starward Nova is a 2018 release from the Australian distillery which is said to use full maturation in Australian red wine barrels which are filled with new make spirit only hours from being emptied, so still wet with wine. The focus of the distillery is to work on maturations and finishes mainly in Australian red wines, experimenting with different casks and periods of finish.
The red berries (strawberry, figs, red current) component is quite straight forward, juicy and very present. The low ABV is here a plus, as the red wine influence is not pushing over the tannic/astringent side, rather it keeps a refined and complex structure. A nice vanilla also emerges with time, adding some spices. Not the most complex, yet well managed.
Also here there is a nice confirmation of the light influence of the wine casks, with mixed red berries jam, not overcooked, and a fresh sensation which is the prelude to a light licorice.
Medium, this time a little darker and more astringent.
Starward Nova is a well-crafted product, where the influence of wine is contained, thus adding aromas without overwhelming other notes. Pleasant, yet not the most complex spirit.
