Starward Projects Ginger Beer Cask #6 is the 2021 release of Starward's experimental "Projects" series. This time it features a quite particular maturation in Apera wine (a fortified wine from Australia) and red wine barrels, before a finish in casks which contained ginger beer brewed at Starward's.
Some elements are reminding a classic sherry product, such as extra ripe red fruit (strawberry, fig, wet sultana). This profile is however at times transformed into more tropical fruit (papaya, mango passion fruit). The winey component is present yet not too tannic. A touch of leather. A final touch of fresh Indian spices on chocolate.
Sweeter than the nose, with a minor alcoholic touch. Still fruity, but the components are somehow obscured by the important vanilla sweetness, not the most sophisticated one. In some sips it shows a more robust salty and fresh ginger component, emerging on top of the sweetness. Less expressive than the nose.
Medium, sugary, the continuation of the palatal experience rather than a reconnection with the nose.
Starward Projects Ginger Beer Cask #6 is a rather particular experience; the nose is somehow complex and very enjoyable, with several different types of fruit with different levels of processing and ripeness, and the ginger component seems well integrated. The palate and the finish, on the contrary, are definitely simpler and more mono-dimensional, dominated by a basic sweetness obscuring the other tastes, except for certain salty / fresh moments. Some moments of very good fruition, balanced by some more basic ones.
