The Waterford Sheestown 1.2 is a single malt Irish whiskey. For its making, only barley from the Sheestown farm (south of Kilkenny) is used. The quality of barley is "Irina" and was harvested in 2015, fermented with the use of yeast from the distillery called "Mauri" in 2016. This whiskey was aged for 4 years in a mix of of American first fill ex-bourbon oak barrels (33%), French oak barrels (25%), ex-French wine Vin Doux Naturel barrels (23%) and virgin American oak barrels (19%). It was in 2020.
On the nose is fresh, with hints of vanilla and citrus, among which the lemon peel stands out. Hints of custard.
On the palate it is particularly smooth, with vanilla, some red fruit, wood and hints of lemon peel.
The finish is medium. Round. Wood and vanilla are confirmed.
Overall, the Waterford Sheestown 1.2 is whiskey boasting an interesting balance. It is round and easy to appreciate, due to a remarkable harmony and a not particularly large or structured flavor profile.
