Waterford Heritage Hunter is a release belonging to the Arcadian Farm Origin series, including Organic, Biodynamic, Heritage & Peated whiskies. In this specific case, the barley used for this bottling is Hunter, named after pioneering plant breeder Dr Herbert Hunter, who introduced in 1959 this variety, which for almost two decades was popular for its distinctive flavour. Vanished from the Irish landscape since the late 1970s, superceded by more economically rewarding crosses, all that remained of Hunter was a 50 gram bag in the seed bank of the Irish Department of Agriculture, Food the Marine. Waterford decided to accept the challenge and after few years obtained enough spirit to fill 50 casks. It is from that first distillation that this whisky has been drawn.
This is a truly unique nose. The first evocative notes are reminding of anchovies on a buttery crouton. With time this very intense fishy feeling is dispersed into some chalk, earth, roots, with black olives and sea water. Fruit is limited to fondant lemon candy.
Gingery and acidic at first, quite intense, almost exploding sensations. Green spices, pretty strong. The fruit is limited to white pear. It continues on sapid notes of cloves, which are stimulating salivation.
Very long, warm, with the continuation of the spices, which are maybe turning from green to more white ones. Still sapid.
Waterford Heritage Hunter is overall a very unique experience. The fish-oriented initial part of the nose is rather unique and truly evocative, even though it can be perceived as divisive. The second part of the nose is more earthy and still rather special. The palate is less different, acidic and gingery, with only some white pear to quench the salty part. At times the overall experience can be tough, but it can be considered as one of the most unique products on the market.
