Whiskyfacile Bimber 4yo is the latest release from the most famous Italian whisky bloggers, belonging to the Black Cat series. Bimber is the distillery that, since the moment the first casks were laid down on the 26th May 2016, has turned the spotlight on the English Single Malt, and at the same time has redefined the very concept of craft distillery: Dariusz and his team malt barley on the floor in a garage in London, ferment in open vats for a week, distill with small stills by direct fire, filling a barrel a day. They make no secret about the continuous research and experiment on the ferment and yeasts.
Definitely more refined than expected for such a short age statement; there is a nice ripe cherry dimension with milk chocolate, provided by the 1 year finish, whish is however balanced and charming. Typical notes of honey, propolis and ripe stone fruit can still be perceived in the background. The impression is of a nice, creamy spirit.
Even better than the nose. Entrance is hot, with alcohol pushing the tastes without being unbalanced. After a crushed pepper sensation the mouth is covered in layers of different tastes, nuts, raisin, toffee, milk chocolate.
Medium long, warm, seductive and refined, mellow, with a great balance between sweetness and fruity character, decadent due to the PX but still alive.
Whiskyfacile Bimber 4yo is an excellent product which, despite the limited age, confirms that for specific bottlings it is important to go beyond age statements, as the spirit may be truly surprising, refined and rich in sensations, well balanced between the specific original character of the distillery and the PX finish, which depicts layers of chocolate, raisins and cherry, without overwhelming some of the most subtle notes.
