Whistlepig 12yo is a product from the Vermont distillery in which the spirit, after a very extensive maturation of 12 years in New American Oak, is split into one of three barrels – Madeira (63%), Sauternes (30%) and Port (7%) for the finish. The final product is bottled at 43& ABV.
Nothing more than excellent and quite complex; in an overall coverage of burnt sugar, one can distinguish sweet, classy hints of madeira and port wine, from baked apples to deep and juicy sultanas, to dark plums and blackberries. The oak is perceptible, yet in the background, without a disturbing dryness. LAst, a quality vanilla such as in specific cakes take the stage.
In the initial part of the sip the fresh character of a mellow rye can be distinguished, to quickly transform into spicy caramel, with the correct sweetness, and several varieties of plums, raisins and berries. Very complex and well crafted.
Medium-long, on the sweet side like a dessert wine, however with some classy caramel and fruity core which are still lingering on the lips.
Whistlepig 12yo is a very well crafted product, mixing in a unique way different wine finishes with a very smooth, gentle yet fresh rye core. A unique product, worth trying to explore the new craft rye potentialities.
