If you have ever craved some Thanksgiving day feast in your whiskey, the Bird of Courage is for you. Steven Grasse, and the distilling team at New Hampshire’s Tamworth Distilling, have done such a thing. The base of the whiskey is a 5-year-old bottled-in-bond bourbon (12% rye, 81% corn, 7% malt). Then Distiller Matt Power combined the festive tastes of turkey, stuffing, sweet potatoes, apples, cranberries, parsley, flint corn, rare locally sourced chestnuts and locally grown sage. All of the ingredients were individually distilled on a vacuum evaporator before being infused into the bourbon. All of the ingredients were sourced from local farms near the distillery. The turkey was even from the Behr Farm in Tamworth, NH. Very from farm to in your glass, if you can say that.
Bird of Courage is bottled at 92 proof (46% ABV), with an MSRP of $65 for 200ml bottle. It’s available through www.seelbachs.com and in limited quantities from Tamworth Distilling in New Hampshire, and at Philadelphia’s Art in the Age.
