Yushan Signature Sherry Cask is a Taiwanese single malt whisky produced at the Nantou distillery, property of TTL Group, which is named after the nearest city. The area is nearby the Bagua mountains and Maoluo river. This region is mainly famous for the tea production rather than whisky. The distillery opened in 2008, becoming the second largest in the country. Since 2012 it is managed by Mr. Pan, a traveler who discovered in Scotland a great passion for whisky. This spirit is distilled in Scottish-made copper stills. The name of the bottling comes from the highest mountain in Taiwan.
Rather open from the very beginning. Golden plums, currant, raisins and a touch of lemon on the fruity side, with a certain chalky side with fresh hints. It is an expressive, fresh yet fruity nose, on the unripe yellow/red mix side. A slightly mineral dimension. Alcohol is not fully silent, yet well managed.
Warm at entrance, with a more processed fruity side compared to the freshness of the nose. Fruit salad with its juice, maybe of some days ago. Sweetness is increased, in a pleasant way, yet there is also a darker components reminding rhubarb and dark spices.
Interesting mix between sweetness and darker, slightly bitter notes which can be reconciled with rhubarb and mixed bitter herbs. Almost balsamic at moments. Medium duration.
Yushan Signature Sherry Cask is a very interesting whisky; the nose is more fruity, with an interesting mix, fresh and pleasant, with hints of chalk and minerals. The palate and the finish continues on this plot yet evolving it into some darker and slightly bitter components of rhubarb and mixed herbs.
