Glenfarclas 25yo is a regular production from the Highland Distillery, which features 5 generations of same family ownership, the Grant family.
A very great Oloroso representation, not too dry in several aspects. Lively and intense for a 25 yo malt, with ripe red fruit jam (strawberries) and dark plums. Some distant hints of very ripe bloody orange, maybe even a note of Port wine of best quality and chestnut honey. It continues evolving, but it especially surprises for its juiciness, as well as for the malty core of butterscotch. Sweetness is present, similar to a great cake, but never too invasive or too sugary.
The sip is very classy and neat, clean, yet very intense and gifted in high quality. Some oakiness and a very minor smoke emerge on top of a very solid red berries and bloody orange core. Almost chewy.
Long, classy and very balanced, a very very nice experience.
Glenfarclas 25yo is a true ode to Oloroso quality casks, which will be very difficult to pair for products aged in "sherry-seasoned" casks. This classy malt has a deep oakiness and some very pleasant spices on top of a juicy, not too dry core of ripe red berries and bloody oranges. A classic, a blue chip for every season and every palate.
