Rhum J.M is an agricole distillery in the north of Martinique, at Habitation Bellevue on the slopes of the Montagne Pelée volcano; the initials come from Jean-Marie Martin, whose distillery Gustave Crassous de Médeuil acquired in 1914. As with all Martinique agricole, its rums are distilled from fresh sugarcane juice rather than molasses and fall under the island's AOC, which does not permit added sugar, colouring or flavouring. Épices Créoles belongs to J.M's "L'Atelier des Rhums" collection, a range built around different cask sizes and toasting levels; the "Creole spices" of the name refer to the spiced character drawn from the varied French and American oak used to age it, not to any added spice.
Intense aromas of young wood, wood resin and toasted notes. Citrus essential oils. Vegetal and balsamic shades.
Young wood carries through, along with toasted notes and vegetal and balsamic aromas, the latter growing more and more intense.
Medium length. Balsamic and vegetal. Slightly dry.
Overall, the The Real McCoy 12 Year Old delivers a good complexity, even if the aromatic profile is not among the broadest. The bouquet is atypical and rather unique.
