Redemption Sur Lee draws inspiration from the French winemaking technique known as “sur lie,” which involves aging wine with its lees (the dead yeast cells). In this process, Redemption incorporates the backset collected during distillation, which they refer to as “whiskey lees.” These whiskey lees are added to the barrels before aging, and the barrels are periodically rotated to enhance the whiskey’s interaction with the lees.
Redemption Sur Lee is bottled without chill filtration at 94 proof (47% ABV). Initially released as a limited edition in October 2022, it became a permanent addition to the brand’s Specialty Series this year. The suggested retail price is $59.99.
