Dingle Single Pot Still Batch 5 is a release from the Irish distillery, made up of only ex-bourbon casks, differently from batch 4 which was created using both ex-bourbon and ex-sherry Oloroso casks. It has been triple distilled. Half of the globally produced bottles are intended to be sold in Ireland, with the other half going to the international markets. This is intended to be the final release of this series.
Main contribution are from the bourbon casks: yellow fruit such as apple, quince, sweet lemon and even some coconut are given off first, then a minor citric aspect kicks in. For a single pot still, the spicy character is very contained, maybe just some cinnamon.
Well balanced, smooth, maybe again missing some more spicy sides which would have given extra power to the sip. Again on orchard fruit, maybe here with an extra peach sense. Only at the end a minor, sweet and dry spices (of marzipan?) contribution can be perceived.
Medium-short, less fresh than the overall experience, with some hints of cocoa and some herbal spices.
Dingle Single Pot Still Batch 5 is a pleasant experience, as the triple distillation has brought through some nice delicate elements and the active bourbon casks have provided major fruity character. Maybe the downside is that the typical spicy element of single pot still are very minor and sweet here. Short finish.
