Edradour No.2 7yo is the inaugural release from the second distillery of Edradour, located on the same ground of the other one and now property of the Signatory independent bottler.
A minor herbal bitter of licorice makes the entrance for a de-hydrated, high and sophisticated red fruit mix, for a very unique, unexpected sherried experience, which is asking for repeated, pleasant tests.
A perfect ABV provides the perfect match of intensity and smoothness, for a round sweetness which is filling the palate. The sherry butts did a great job in imparting good quality strawberry, dark cherries and prunes sensations, with no signs of astringency and tannins. High quality, slightly retro, though with a twist.
Long, much longer than the 7 years of aging may suggest, again on a slightly bitter note well pairing the sherried primary aromas.
Edradour No.2 7yo is an excellent first release of the second distillery site belonging to Edradour, a glimpse of what this new site may provide us in future, longer aging bottlings.
