GlenAllachie proudly presents chapter four, featuring one of the rarest styles: Palo Cortado. Palo Cortado starts as a Fino, developing as the ‘flor’ yeast fades during maturation. Its flavor profile sits between Amontillado and Oloroso, matured in puncheons and hogshead casks that previously held this Sherry.
