TASTING NOTES - WILSON & MORGAN CAOL ILA 2010 - 2021 QUERCUS ALBA

Nose

The maritime DNA of the distillery can be immediately perceived, with fresh oysters and lemon over a punch of salt. The sweetness of virgin oak provides a shift in the lemon character, which becomes a sweet Amalfi one, with limoncello cream. Behind this creamy character, the mineral soul is intense and with a touch of true smoky, leathery peat. May be even a touch of black pepper on the above mentioned oysters. Quite nice, open and direct.

Palate

Again quite intense, even though maybe the sweet notes are slightly more direct and simpler when compared to the nose. The sweet lemon is now paired by pineapple, both of them grilled and smoked on the barbecue. Embers and a liquid sugar sweetness are then taking over, losing a touch of complexity.

Finish

Medium duration, the natural continuation of the palate.

Wilson & Morgan Caol Ila 2010 - 2021 Quercus Alba is a direct product, which is simpler to appreciate at the open nose, where the intensity is well balanced by defined aromas and a touch of complexity which is less evident on the palate. A great value dram, respectful of the distillery DNA with a touch of innovation thanks to the virgin oak addition.
