Depaz Port Cask Finish belongs to the prestigious "Les Finish Martinique" collection, the house's series dedicated to exploring different cask finishes on its aged rhum agricole. The rhum has been aged for 8 years in small oak barrels before being transferred to ex-Port casks and matured for a further 11 months, a finishing technique that brings a distinct fruity and sweet dimension to the final blend. It carries the AOC Martinique designation and is bottled at 45% ABV.
Wood opens the nose, accompanied by a touch of varnish and vanilla beans. Cocoa follows, then ripe red fruit in a mix of cherry and black cherries. Balsamic aromas close the picture, adding a faint herbal lift to the overall sweetness.
Fresh on entry, with a vegetal character and a light balsamic note that recalls the nose. Sultana, apricot and plums enrich the mid-palate, before cocoa and spices take over, joined by leather and coffee for a darker, more structured close.
Medium-long. Sultanas and coffee linger together, balancing dried fruit sweetness against a drier, roasted edge.
