Koval Single Barrel Bourbon is a whiskey produced by the Chicago distillery using a 51% mash composed of corn (as per the bourbon regulation), while in the remaining 49% rye is replaced by millet, a cereal little used in this type of distillates. Of the distillery, which was founded in 2008 by Robert and Sonat Birchner, which uses organic products and is certified kosher.
Of good intensity, with oak wood and cinnamon, to which is added a balsamic herbaceous, almost camphor-like note. Not complex but pleasant.
Hot and spicy (cloves) from the very beginning, with a marked sweetness that is a counterpoint to the initial spices. Sweetened orange juice, very ripe apricot. At times a more herbaceous character returns, as of semi-sweet licorice.
Medium duration, sweet, perhaps a bit simple and one-dimensional.
Koval Single Barrel Bourbon is overall a simple and frank bourbon; the ABV gives above all to the nose a good intensity, while on the palate, beyond the spicy initial moments, it perhaps has the flaw of being reduced to a simple sweetness and in the long run a bit monocorde.
