Saint James is one of the oldest and most historically significant rhum agricole producers in Martinique, founded in 1765 in Sainte-Marie. The Les Ephémères is a four-part limited series of cask strength vintage releases, conceived so that the lot numbers (read in sequence N°1, N°7, N°6, N°5) spell out the distillery's founding year. The N°7 is the second release in the series, distilled on 21 March 2007 in a traditional Creole column still and aged for 15 years in 200-litre American oak barrels in the tropical climate of Sainte-Marie, before being bottled barrel proof on 22 April 2022. The outturn was limited to 2,720 bottles, each selected by Maître de Chai Marc Sassier.
Wood varnish opens the nose, quickly giving way to a riot of ripe tropical fruits in which mango stands out clearly, alongside pineapple. A nuance of orange peel adds a citrus lift, while cocoa beans round off the aromatic picture with a pleasant, slightly bitter depth.
Smooth for its strength. Cocoa leads, followed by wood spices, cinnamon and oak, before red fruits emerge, recalling cherry in spirits in particular, alongside some plum. Rich and layered, with a structure that reveals itself progressively.
Long and peppery. Cocoa and honey linger, with a slightly dry closing note that keeps the finish focused and clean.
Overall, the Saint James Les Ephémères N°7 Brut de Fût Millésimé 2007 is rich and intense rhum, boasting a marked structure. It offers a deep and complex flavor profile that rewards patience in the glass. A very interesting product, capable of being highly satisfying for those who appreciate aged rhum agricole at full cask strength.
