Thy Whisky PX & Oloroso 2025 is the second Limited Edition bottling of PX & Oloroso, coming after the 2024 edition from the Danish distillery, founded in the Gyrup estate. This farm has been property of the same family for eight generations, since 1773, and Gyrup is also the name of the area between Nørhå and Ovesø. Thy Whisky was founded in 2010 on the idea to create a whisky from the estate's own organic grains, from Nordic heritage varieties and Danish smoking techniques to capture the taste of the Danish soil. The 2025 edition has been bottled at a slightly higher ABV, and adding a touch more of beechwood smoke to the mix, and let the casks mature for an extra year. Odyssey barley from Gyrup estate, harvested in 2018 & 2019 has been used. Fermentation time has been 6-14 days, using M1 distillery yeast. The outturn has been of 1415 bottles.
Very pleasant. A light, sweet yet present woody smoke is well integrated with a sweet core of red berries, sultanas and a touch of blackberry. The sugary crust component is present, yet not artificial. A touch of brown sugar and some butterscotch. Medium complexity, but very nice, with a second part of the nose suggesting of some herbal hints.
Expressive and open, with an oily moutfeel and an extremely well balanced contribution of the sweet peat. The dry and nutty aspects belonging to the Oloroso are just present to counterbalance the gourmand character of the PX, with chocolate ganache and wet sultanas.
Medium duration, with a gentle sensation of sweet smoke and distant red berries.
Surprisingly pleasant for such a young release. Modern, yet centered and balanced, with some originality. A very welcome surprise.
