Whiskey Acres Bottled in Bond Rye is an older, higher-proof expression of the distillery's Straight Rye. Founded by fifth-generation farmers in DeKalb, Illinois, Whiskey Acres grows, distills, and ages everything on site, and this release takes that commitment a step further by conforming to the strict requirements of the Bottled in Bond Act: distilled in a single season, aged for a minimum of four years, and bottled at exactly 100 proof. The mash bill is made of 75% rye and 25% corn.
Clean and inviting, with warm cereals, vanilla, and gentle baking spice setting a welcoming tone. The grain character is present without being sharp.
Smooth and well integrated, with the alcohol sitting quietly beneath layers of white pepper, malted grain, and cereal biscuit. A touch of oak and subtle toasted notes add structure, while a buttery, almost creamy quality runs through the whole and keeps the rye spice in check. Soft and velvety in texture, this is a whiskey that develops steadily rather than announces itself immediately.
Long and satisfying, with a creamy, buttery warmth that lingers well beyond the last sip, fading gently into clean grain and a whisper of spice.
Overall, the Whiskey Acres Bottled in Bond Rye is a smooth rye whiskey, that truly comes into its own on the palate, where its full potential unfolds gradually and generously. Buttery, round, and well-balanced, it is a genuine farm-to-glass whiskey that rewards those willing to slow down and pay attention.
