The Macallan Harmony Collection Rich Cacao

The Macallan has unveiled their newest collection, The Harmony Collection. The first limited-edition whisky in the new series of single malts, is called the Rich Cacao. The whisky was a collaboration with The Macallan whisky maker Polly Logan, and pastry chef Jordi Roca (of three Michelin star restaurant El Celler de Can Roca, and owner of the Casa Cacao hotel and chocolate boutique). Polly went on a trip to Girona, Spain, where she learned about all things in the chocolate making process. Polly then worked with Jordi at the Casa Cacao, where they worked on discovering the very distinct flavor profiles of Cacao. Polly also spent time with the Master Chocolatier of Casa Cacao, Damien Allsop. The passion of chocolate from Jordi and Damien, gave inspiration to Polly to create The Macallan Harmony Collection Rich Cacao. She then went through The Macallan’s maturing casks, and sought after whisky with chocolate notes that would pair perfectly with the fine chocolates she had experienced on her time in Spain. The whisky chosen was liquid from a combination of European and American oak casks.

The Macallan Harmony Collection Rich Cacao is bottled at 88 proof (44% ABV). The 750-ml bottle has an MSRP of $160 before taxes. It is presented in a fully recyclable and biodegradable box, that is made with discarded husks from cocoa pods. The by-products have seen a second life as packaging, instead of being sent to a landfill. The Macallan Harmony Collection Rich Cacao will be available globally starting in October 2021.
